🍰 Pistachio Cheesecake Recipe – No Bake

 

Ingredients (for an 18 cm cake pan):

Base:

  • 150 g digestive biscuits (or sugar-free biscuits)

  • 60 g coconut oil or butter (melted)

  • 2 tbsp ground pistachios

Cream:

  • 250 g plain cream cheese (light option available)

  • 200 g Greek yogurt

  • 3 tbsp honey or erythritol (depending on desired sweetness)

  • 1 tsp vanilla extract

  • 5 g gelatin (or agar-agar) + 2 tbsp water

  • 50 g ground pistachios

Topping:

  • 2 tbsp coarsely chopped pistachios

  • optionally a little grated lemon zest for freshness


Instructions:

  1. Crumble the biscuits, mix with the melted butter/coconut oil and ground pistachios, then press into the bottom of the cake pan. Refrigerate.

  2. Mix the cream cheese, yogurt, sweetener, and vanilla until smooth.

  3. Dissolve the gelatin in a little water, then stir into the cream.

  4. Add the ground pistachios, then pour over the biscuit base.

  5. Refrigerate for at least 3-4 hours (preferably overnight).

  6. Sprinkle the top with coarsely chopped pistachios and fresh lemon zest.
